DOMAINES, CHATEAUX & MAISONS.The Vine is daughter of Mother Nature, the Wine is son of Human kind“, says famous wine educator Jacques PUISAIS*. If the Earth has this great capacity to produce grapes, human work is necessary to make wine happen. Preparing land and composing with environmental conditions so that vines can bear the best fruits is the main challenge our vintners are trying to meet. In the cellar, the task is more to set up the things so that the wine makes itself. It’s true even for our choice of Sparkling wines although there are more things to set up for them…

We believe that behind every bottle of a wine lies the human soul of its author, a vintner who found his unique harmony with his terroir. Thus, every generation finds its own harmony, slightly different from their ancestors ones… tracing their path in life.

Nature, of course, has its whims. It is called the climate effect coloring every vintage. It is a space-time relation: profound, vibrant and alive. “When you taste a cuvee made by a vintner passionate about his land and dedicated to revealing Terroir and Life, you have the opportunity to revisit his space-time” says Bruno QUENIOUX*.  That is where operates the magic of wines we will introduce you to.

RESTAURANTS. If wine is among the best sensorial teachers, it is also true that it never tells the same story twice. Wine tasting in the cellar, out of the barrel in which its brothers and sisters are aging under the guidance of the Father Vintner will be different from wine tasting from a bottle opened on its birthplace, in the very heart of the parcel, or under a crowd of stars and milky moon. And it will be different again when tasted in company of a matching finest cuisine…

Together with our vintners, we believe that a perfect wine & food alliance is a true experience of harmony. Not every chef is sensitive to wine and food pairing, willing to listen to what they have to say to each other. But neither humans are always ready to listen to each other. Indeed, wine and food pairing is like a human union: better together than apart and no one having to dominate the other. Of course, finding such a harmony requires modesty, authenticity, and true talent that only some chefs possess. We met and partnered with those who do.

In fact, our chefs do more: They are poets who compose cuisine for a wine muse…
